How about something Outer Banky? I thought I'd share this incase I loose it in the flood and they go in the water again. This recipe came from Hurricane Mo's in Kitty Hawk and is the best salsa ever. Here is the original and my (half) version.
Hurricane Mo's Salsa
(2-28 oz.) -- 1 102 oz. can petite diced tomatoes (drained)
(1 cup) ----- 2 cups "finely" chopped white onion
(1/4 cup) --- 1/2 cup processed jarred jalapenos
(2 limes) --- juice of 4 fresh limes
(2 tsp) ----- 1 tbsp salt plus 1 teaspoon salt
(1 1/2 tsp) - 1 tbsp black pepper
(1 cup) ----- 2 cups fresh cilantro leaves (1 bundle for half)
(1 1/2 tsp) - 1 tbsp minced garlic
(for half) -- original makes a gallonProcess in food processor!! (don't over do it)
