Most people have stepped up to 8 ounce sinkers , but it sounds like you've got the general idea. Most of the pier tackle shops sell a "grapple" type sinker now that holds the bottom better.

As far as being in season - yes - but as always it depends on the weather and water. One good storm system can mess up an otherwise perfect week for king fishing by churning the water up.
