I'll add a couple of things to what has already been said ( some good advice BTW) : If you're going to use gotcha plugs or other lures , you probably want to use a 30-50 pound fluorocarbon leader so the bluefish don't bite you off.
Bait: I always start with bloodworms and work my way up from there. If I catch a spot , he goes under the knife for cut bait. If I catch a bait sized bluefish , I'll use him for cut bait too , or put him on a king mack rig. I have had a lot of success using blues for cut bait , since they seem to bleed a lot more than spots do.
Be careful! Lots of saltwater fish have sharp teeth and they will bite you when you are trying to take the hook out. Especially bluefish and spanish mackerel!
