Cobia Cheviche......Chopped up 3 pounds of prime Cobia chunks into crouton sized pieces...put them in a big bowl of jucies....2/3 lemon juice,1/3 lime juice and squeezed the juice from a large orange in with it .Soaked the meat for 7 hours and the acid cooks it pearly white.Chop up cucumbers,cilantro,scallions,red onion,radishes,red/green/yellow/orange/& jalapeno peppers,yellow corn,celery and cherry tomatoes....Drain meat...add to veggies with salt black pepper and red pepper flakes.........It will make ya want to slap ya Momma
