I've started baking my wings at 350 degrees until cooked then into the deep fryer to crisp them up a bit more. A good tweak to the standard 50:50 butter/Franks Hot Sauce is to add a splash of white wine vinegar, a few dashes of Worcestershire sauce and a pinch of granulated garlic powder. I don't remember where I got that but it does perk up the sauce.
