salt curing bait....

I'm going to try salt curing some bait before visiting the Outer Banks this year. Any suggestions (Brand Name?) for a good salt to use? Would the Morton non-iodized table salt work? Most table salts have an anti-caking additive.
Also, would thawed (previously frozen) shrimp be acceptable or does it need to be fresh (unavailable in my neck of the woods)?
