we got about about 2 inches of snow yesterday. windy and in 20,s today. have a nice young doe hanging. going to let it hang for a week if temps stay low. have a splitter that has no hydraulics. it has two 75 lb. flywheels driven by a 6 horse motor. hit a button and a plunger hits wood and splits it. it's very fast but u have to be careful. made some homemade sausage yesterday, here is recipe. 10 lbs of fresh pork. I use boston butt or picnic shoulder. 2 tb spoons ground sage. 4 tb spoons brown sugar. 1/4 t spoon red pepper. 2 tb spoons black pepper. 1/4 cup salt(u can use less salt). cut skin off pork and cut pork into small pieces to fit your grinder. put in pan(I use turkey roaster) and season. mix well. put in fridge for 6 to 12 hours. mixing every 2 to 3 hours. grind with course grinding plate first, then mix and grind with regular plate. I put in 1 lb. bags and vacuum seal.
