Collards

It's that time of the year. The local collards, curly kale and cabbage are in at the stands along the road north of the bridge in Currituck.
There is several selling collards, my favorite place is the one near the school. He grew some nice looking big collards and cabbage this year.
My easy way for cooking collards is to cut the leaf off the stem, wash and cut the big leaf vein out the middle by going around it with a knife or pull it off. Cook the leaves down in a big pot with water a little salt, pepper and butter until they turn dark green in about an hour. You can freeze the leftovers.
Also BJ's was not very good, over and under cooked was great the last time and heard the waitress ask somebody why he wasn't in the kitchen today.
