Here is a great way to smoke salmon and trout. I've done tuna as well but choose to add hot peppers and smoke a lot less time.1 cup salt 1 cup brown sugar mix with water cover fish overnight. Pull fish from brine and set on racks out in cool area for two hours. This process helps the smoke adhere to fish as it forms a tacky film on the fish. Set smoker to 120 alder wood works best for fish in my opinion. 2 hours at 120 2 hours 140 2 hours 160. After the first two hours brush the fish with REAL maple syrup ( not Mrs. Buttersworth) Yummy
