Gotta change it up

Ok ...so I was watching Jacque Pepin - old French guy...has a cooking show on Create ...anyway the other night he cooked .....Ray wing ! Said he and his brother used to fight over the cartlidge in the center of the filets . He made it look easy ....took scissors and took off the bottom wing part ... then cut the wings into four length wise filets , skinned both sides , dusted them in flour real light and pan fried them for about 6-8 minutes a side . When done , the cartlidge slides out between the two filets , Pepin then just munched a piece of the cartlidge . He said the meat is very tasty and is gaining popularity all over . Was kinda chuckling to myself thinking of this blog.
