I fillet ,skin,and take the blood line out of blues. I then soak the fish in salt water ,changing the salty H2O twice, then I sprinkle "OLD BAY" on them and broil the fillets until it flakes. Don't over cook. I "my wife" then makes crab cakes out of it.You also can fillets dip in egg and then House of Autery seafood season and fry.That's two ways I like it.
